Appetizers and Hors D’oeuvres

1) Brisket Sliders

– Tender and luscious (slow cooked over 13 hours) brisket sliced to order served on three bite buns topped with grainy mustard, bbq sauce and creamy coleslaw.

2) Beef Sliders

– A combination of brisket, chuck and sirloin patties grilled to a perfect medium/medium well.  Served on mini brioche buns with caramelized onions and sauteed cremini mushrooms with a sharp mustard and savoury homemade ketchup.

* Optional – Can be served with a sharp cheddar cheese.

3) Beet Sliders

– Thickly cut beets are lightly pickled a la corn beef, then grilled.  This vegetarian favourite is served on either a brioche or whole wheat bun smeared with herbed goat cheese then layered with mixed greens, caramelized onions, pickles, whole grain creamy mustard, homemade ketchup and mayo.

4) Pulled Pork Sliders

– Marinated for 24 hours in a dry rub then cooked low and slow for up to 10 hours. This luscious pulled pork tops a soft cheddar cornbread bun and is finished with a jalapeno, cilantro coleslaw, tangy bbq sauce and pickled onions.

5) Crispy Halibut Fish Tacos 

– Corn tortillas are filled with lightly battered crispy halibut fillet, seasoned cabbage slaw, pico de gallo, marinated red onions, crispy radish, vibrant cilantro and an avocado lime crema.

*Optional- Halibut can be grilled.

6) Braised Short Rib Tacos

– Ontario beef short ribs are marinated in a dry rub spice mixture overnight then simmered over a low flame for 7 hours.  Served on fresh tortillas with spicy guacamole, pico de gallo, queso fresco, marinated red onions and a fresh cilantro tomatillo salsa.

7) Slow Cooked Chicken Tacos

– Marinated and slow cooked pulled chicken teams up with a black bean and garlic puree, fresh guacamole, pickled cabbage and red onions, spicy habanero salsa.  Served on corn tortillas and finished with a cilantro crema.

8) Sweet and Spicy Chicken Breast Skewers

– Marinated overnight in an herbaceous combination then grilled till tender.  Served with a pleasantly spiced fresh mango hoisin dipping sauce.

9) Marinated Mediterranean Spiced Lamb Skewers

– Marinated for 24 hours with garlic, herbs and aromatics then grilled till amazing.  Served a vibrant chimichurri dipping sauce.

10) Buttermilk Popcorn Chicken 

– Bite sized chicken breast pieces are marinated in a seasoned buttermilk bath then lightly coated and fried till crispy.  Served with a creamy kicked up ranch dipping sauce.

11) Moroccan Won Tons

– Freshly ground, organic beef is sauteed with pine nuts, cumin and inspired mediterranean spices then fried till golden (can sub in chicken or turkey).  Served with a white bean, tahini, coriander, lemon dipping sauce.

12) Avocado Bacon & Tomato Mini Egg Rolls 

– Crispy smoky bacon is combined with creamy avocado and fresh acidic tomatoes, shaved cabbage and sharp cheddar in a crispy egg roll bite.  Served with a creamy chipotle dressing.

* Can be done with pork, turkey or beef bacon.  OR crispy fried marinated tofu/halloumi *

13) Smoked Salmon on Rye Bites

– Florets of smoked salmon are served on rye bread toast points with a caper olive cream cheese topped with pea sprouts, alfalfa sprouts and pickled red onions.  Served with a lemon dill aioli.

14) Arancini 

– A creamy luscious risotto base is filled with either a spicy meat and olive or cheese and olive combination and fried till crispy.  Served with a tangy basil infused tomato sauce and garnished fresh grated Grana Padano.

15) Mushroom and Blue Cheese Crostini

– A medley of seasonal mushrooms are sauteed with garlic and aromatics, then cooked down with blue cheese and a touch of cream.  Served on an olive oil brushed crostini and garnished with fresh basil.

16) Mediterranean Crostini

– A classic combination of vine ripened tomatoes, fresh vibrant basil, fruity olive oil, peppery red onion and creamy goat cheese come together and are served on a toasted crostini.

17) English Pea, Parmesan and Mint Crostini

– Fresh English peas, bright mint and salty yet creamy parmesan are pureed and seasoned, then shmeared on a crusty crostini and garnished with fresh grated parm and pea sprouts.

18) Veggie Fresh Spring Rolls

– Julienned napa cabbage, bean sprouts, daikon radish, carrots and cilantro are rolled in a texturally pleasing rice paper wrap.  Served with a sweet and savoury yet fruity thai inspired dipping sauce.

*Fresh steamed shrimp can be added.

19) Cauliflower Buffalo wings 

– Cauliflower bites are seasoned then lightly coated and baked till crisp yet still tender in the middle.  They’re then tossed in a hot buffalo wing sauce and served with a creamy blue cheese dip along with carrot and celery sticks.

20) Crispy Mac and Cheese Bites 

– Traditional elbow macaroni is combined with a creamy Gouda cheese sauce then portioned into bite size balls, lightly breaded and fried till crunchy, yet oozy and cheesy.  Served with a trio of a tangy marinara,  garlic and herb and spicy ketchup dipping sauces.

21) Roasted Beet, White Bean Hummus 

– Roasted beets are pureed with white beans, tahini paste, lemon juice, garlic, and olive oil.  The hummus is finished with a sprinkling of pink peppercorns, and micro herbs and served with fresh crudites and/or pita chips.

22) Potato Puffs

– Yukon Gold potatoes are mashed, seasoned aromatically then combined with feta cheese and baked in luscious freshly made puff pastry till golden and delicious.

24)  Spinach and Feta Bites

– Fresh spinach is sauteed with garlic, feta cheese and aromatics then rolled in freshly made phyllo pastry and baked till crispy.

– A combination of zucchini, bell peppers, onions and mushrooms are grilled and served on foccacia along with a goat cheese and basil shmear
